Fresh Cranberry and White Chocolate Chip Scones

  • 2 cups of flour
  • 5 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons of butter, cut into small pieces
  • 2/3 cup sour cream
  • 1/3 cup skim milk
  • 1/2 cup halved fresh cranberries
  • 1/2 cup white chocolate chips
  • flour for kneading surface
  • sugar for sprinkling on top
Directions
  1. Preheat oven to 425 degrees.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the butter until mixture resembles coarse crumbs.
  4. Stir in the sour cream until just moistened. Add the milk bit by bit until a thick dough forms (depending on humidity you may or may not need it all.)
  5. Gently fold in the cranberries and chocolate chips, taking care to not overmix.
  6. On a lightly floured surface, knead the dough 5 to 10 times. Form into a 1-inch-thick (approx 8-inch diameter) round.
  7. Cut into 8 wedges; place on a baking sheet, 2 inches apart. Sprinkle the tops generously with sugar.
  8. Bake until golden brown, 12 to 15 minutes. Let cool on a wire rack.
