Tomato and Cucumber Salad with Jalapeno

I originally found this recipe as a “relish” for another dish, but it makes a great salad, too.

Start to finish: 10 minutes.

Ingredients

  • 1 1/2 teaspoons cumin seeds
  • 1 1/2 teaspoons coriander seeds
  • 1 1/2 teaspoons mustard seeds
  • 2 medium tomatoes, diced into small pieces
  • 2 cucumbers, peeled and diced small
  • 1 teaspoon minced fresh jalapeno pepper
  • ½ cup fresh lemon juice
  • 1 tablespoon sugar
  • Salt and pepper to taste

Directions

  1. Place the tomato, cucumber, jalapeno, lemon juice, sugar, salt and pepper in a serving dish and stir to combine.
  2. Heat a small sauté pan to medium.
  3. Toast the cumin seeds, coriander seeds and mustard seeds by shaking frequently to avoid burning, until they begin to darken slightly and you can smell them.
  4. Remove from heat, allow to cool slightly, then toss into the tomato/cucumber mixture.
