Scones – Traditional

Finally! Scones like I remember as a kid. Here’s a classic English scone recipe – use raisins (or currants), or mix in blueberries, chocolate chips, raspberries and white chocolate – whatever takes your fancy.

Total time: 25 minutes

Ingredients:

  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 6 tablespoons butter, chilled and cut into cubes
  • 1 egg
  • 2/3 cup milk, approx.
  • 3/4 cup raisins

Directions:

  1. Preheat oven to 400 degrees.
  2. Mix flour, baking powder, sugar and salt until combined.
  3. Cut in butter until completely distributed.
  4. Mix in the raisins (or other fruit or chocolate chips).
  5. Break the egg into a small bowl and whisk lightly. Add the milk and blend well.
  6. Pour over the flour mixture and stir until the dough pull together. Don’t overmix!
  7. Scrape onto lightly floured work surface. Pat or roll 1/2 inch thick. Cut into 2 1/4 rounds.
  8. Bake until tops are lightly colored, about 15 minutes. Cool about 10 minutes before serving.

Notes:

Work quickly, and don’t overmix!
