Riced Cauliflower Fried Rice

Sure looks like fried rice!

Start to finish: under 1/2 hour

Ingredients

  • 1 T + 2 tsp sesame oil (or vegetable oil)
  • 4 c riced cauliflower
  • 1 c frozen mixed vegetables (or fresh vegetables chopped small)
  • 2 green onions, chopped
  • Salt & pepper
  • 2 cloves garlic, minced
  • 2 eggs, whisked
  • 2 T soy sauce

Directions

  1. Heat a large skillet on high then add 1 Tablespoon sesame oil
  2. Add cauliflower, vegetables and green onions.
  3. Stir fry until the cauliflower is just starting to get tender, 3-4 minutes
  4. Add garlic and season with salt and pepper. Stir fry for another 30 seconds or so, or until the garlic is fragrant.
  5. Mix whisked eggs with 1 t sesame oil.
  6. Push the cauliflower to the sides of the wok to create a well in the center, then stream in the eggs. Let sit until set on the bottom then scramble and toss to combine.
  7. Drizzle in soy sauce (then toss to combine.
  8. Scoop into bowls and serve.
