Crispy Oven-Baked Parmesan Chicken

Everything sits on a Ritz… Except in this recipe, the Ritz sits on the chicken. A go-to chicken recipe that is easy to prepare – haven’t found anyone who doesn’t like it!

Prep: 15 minutes; Bake: 45 minutes; Start to finish: 1 hour

Ingredients
  • 1 roll ritz crackers
  • ¾ cup parmesan cheese
  • 2 tablespoons parsley
  • 2 pounds chicken breasts, boneless and each cut into 2 pieces, or use chicken tenders
  • 8 tablespoons butter, melted
Directions
  1. Preheat oven to 350 degrees.
  2. Finely crush the crackers (put in zip bag and crush with a rolling pin). Add parsley and cheese and shake to mix.
  3. Spray a baking pan with oil.
  4. Optional: If using chicken breasts, you can use the whole breast pieces or cut them into smaller strips of similar size (like chicken tenders)
  5.  Dip each chicken piece in the melted butter then put in bag with cracker mixture and shake.
  6. Place in the pan.
  7. Pour any extra cracker mixture and/or butter over the top.
  8. Place in 350 degree oven, bake for 20-45 minutes, depending on the size of your pieces.
