North Woods Bean Soup

Tastes like you’ve spent hours making this soup, yet it comes together in about a half hour.

Start to finish time: approx 30 minutes

Ingredients

  • 2 tsp olive oil
  • 1 cup sliced carrots
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 7 oz. turkey kielbasa, halved lengthwise and cut into 1/2″ pieces
  • 4 cups chicken broth
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. black pepper
  • 2 15oz. cans Great Northern beans, drained and rinsed
  • 1 6oz. bag baby spinach or equivalent of shredded kale

Directions

  1. Heat a large pan and add 2 tsp olive oil.
  2. Add carrots, onion, garlic and kielbasa, saute 3 minutes.
  3. Reduce heat and cook another 5 minutes.
  4. Add broth, seasoning, pepper and beans. Bring to boil, lower heat and simmer 5 minutes.
  5. If using kale add and simmer for a few min. or until tender. If using spinach, remove from heat, add and stir until wilted.

Total time: approx 30 minutes.
