Mini Mason Jar Lid Apple Pies

Too cute!

Ingredients

For the filling:

  •  4 cups apples, sliced and peeled
  • 2 T lemon juice
  • 1/2 cup sugar
  • 3 T cornstarch
  • 1 tsp cinnamon
  • 1 cup warm water
  • pie crust recipe

For the pie crust:

  •  2 cups flour
  • 1 tsp salt
  • 12 T cold butter
  • 8 tsp cold water

Directions

  1. Make the filling:
    1. Peel, core and slice the apples
    2. Place apple slices in a bowl.
    3. Add 3/4 cup water and lemon juice to prevent browning.
    4. In saucepan, whisk together cornstarch and 1/4 cup water
    5. Add cinnamon and sugar. Whisk until blended.
    6. Add apple slices to saucepan and cook over low heat until apples are tender.
    7. Allow to cool before putting into crust.
  2. Make the crust:
    1. Mix together flour and salt in bowl.
    2. Cut in butter until mixture is crumbly.
    3. Add water and blend until it pulls together.
    4. Roll into 2 balls.
    5. Place dough in refrigerator to cool for 1/2 hour.
  3. Assemble and bake the pies:
    1. Preheat oven to 375 degrees.
    2. Place one dough ball on a lightly floured surface and roll out dough.
    3. Using a wide mouth Mason jar lid ring, cut out the pie crust bottoms.
    4. Place one round into regular mouth Mason jar lid with ring, rubber side facing down (away from dough).
    5. Fill with pie ingredients.
    6. Top with second round, gently crimping edges together.
    7. Place pies in freezer for 15 minutes.
    8. Bake for 20 to 25 minutes, until golden brown.
    9. Cool in pans for 10 minutes, then press out of the tins.
