Grilled Cauliflower with Lemon and Parmesan

Cauliflower “steaks” are really popular now – this recipe can compete with the best restaurants!

Prep: 10 minutes; Grill: 15 minutes

Ingredients:

  • 1 head cauliflower
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons minced fresh basil
  • 1/2 teaspoon dried oregano
  • Sea salt and black pepper, to taste
  • 1/2 cup grated parmesan cheese

Directions:

  1. Preheat grill to medium.
  2. Remove outer green leaves from cauliflower. Slice into ¾-inch thick slice “steaks,” cutting from top of head to bottom of stalk.
  3. Arrange on a baking sheet or large plate.
  4. Whisk together oil, lemon juice, basil and oregano; add salt and pepper to taste. Brush mixture on both sides of cauliflower; reserve extra marinade.
  5. Arrange cauliflower on grill. (I use a cooking grate.) Close the top and cook until grilled on one side, 4-5 minutes.
  6. Brush with reserved marinade, turn over, and cook until other side is grilled, about another 4-5 minutes.
  7. Sprinkle cheese liberally on cauliflower; cover and cook until melted. Turn cauliflower over; repeat with remaining cheese.
  8. Serve immediately.
