Chocolate Chip Muffins

You can make them regular sized or mini, make them with milk or semi-sweet chips. Just make them!

Ingredients

  • 2 1/2 cups flour
  • 1 T baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, melted and cooled
  • 1 cup sugar
  • 2 eggs
  • 1 cup milk (whole or buttermilk)
  • 1 1/2 cups chocolate chips

Directions

  1. Preheat oven to 425 degrees; spray a 12- or 24-cup muffin tray or use paper liners.
  2. In a bowl, mix together flour, baking powder, baking soda, salt and chips.
  3. In a separate bowl, whisk together the melted butter, sugar, eggs, and milk.
  4. Slowly add to the dry ingredients, gently folding until just combined.
  5. Divide the batter into the muffin cups and bake for 5 minutes. Reduce the oven temp to 375 degrees and bake for another 12-15 minutes (12-cup pan) or 8-10 minutes (24-cup pan) or until a toothpick inserted into the center comes out clean. Don’t overbake.
  6. Let cool in pan 5-10 minutes, then enjoy.
