Chinese Chicken Salad

A go-to salad for a summer lunch, great for entertaining.

Prep time: 15 minutes; Start-to-finish time: 30 minutes. Allow extra time for chilling to improve flavor.


Ingredients

  • 1 rotisserie chicken, diced, about 2 cups
  • 1 napa cabbage (also called Chinese cabbage), cored and thinly sliced
  • 2 ounces snow peas, trimmed and thinly sliced
  • 4 green onions, thinly sliced, including 3 inches of the green part
  • 1 red bell pepper, cored and thinly sliced
  • ¼ cup cilantro, chopped
  • ½ cup rice vinegar
  • 6 tablespoons vegetable oil
  • 4 tablespoons dark sesame oil
  • 2 tablespoons peanut butter
  • 4 tablespoons honey
  • 2 teaspoons dijon mustard
  • 2 teaspoons soy sauce

Directions

  1. In a large serving bowl, combine chicken, cabbage, snow peas, green onions, bell pepper, and cilantro.
  2. In a blender or food processor, blend or process all dressing ingredients for about 30 seconds, until smooth.
  3. Toss the salad with the dressing and serve.

Servings/Yield: 4 servings
Notes: Tastes best if you let it chill for an hour or so.
